UNCLE PAT'S FAVORITE CURRANT COOKIES--A RECIPE YOU WON'T FIND ANYWHERE ELSE--PERFECT FOR CHRISTMAS TIME OR TEA TIME

A little cookie sitting quietly on a plate.


These little cookies sit innocently on a cookie plate.  They don't get much attention among the brightly decorated cookies.  However once you bite into one, it explodes in your mouth with flavor.  The tang of lemon, the bite of cinnamon combined with the sweetness of the currants and the crunch of the nuts.  You're hooked.  Who wants a gaudy, fancy cookie when there is a flavor power house like my Uncle's favorite cookie.


Then explodes with flavor in your mouth.  Enjoy!!!!


MOTHER'S CURRANT COOKIES
These were my Uncle Pat's favorite cookies. Uncle Pat was a wonderful uncle and a very important part of my childhood. He was proud to have been on the first tank that crossed the Rhine River with General Patton.

2 1/2 c flour
1/2 t baking powder
1/2 t salt
1/2 t cinnamon
3/4 c butter
1 c sugar
2 eggs
1 t lemon rind, grated
1 1/2 c dried currants
1 1/2 c chopped nuts


Ingredients:  Flour, baking powder, salt, cinnamon, butter, sugar, eggs, lemon rind, dried currants and nuts.


Currants are found in many European treats. 


In a bowl, mix dry ingredients together. Set aside. In a large bowl, cream butter and sugar together until fluffy. Add eggs and lemon rind; beat well. Stir in dry ingredients, currants and nuts. Drop by teaspoonful onto greased cookie sheet. (I use a cookie scoop and put the cookies on a parchment paper lined cookie sheet.) Bake in preheated 300° oven for 12 to 15 minutes.  Cool on wire rack.


Grate lemon peel.


Mix dry ingredients together.


Cream butter with an electric mixer.


Add sugar.


Beat butter and sugar together until fluffy.


Add eggs and lemon rind.  The oils of the lemon blend with the butter and infuse the cookies with a lovely lemony taste.


Beat well.


Chop nuts.


Stir dry ingredients, nuts and currants into butter mixture.


Mix well.


I use a cookie scoop to form the cookies and bake them on parchment paper covered cookie sheets.  It makes life so much easier.


Cookies ready to bake.  Bake in preheated 300° oven for 12 to 15 minutes.


Baked cookies ready to dazzle the taste buds.
