PEANUT BUTTER BALLS--I AM SO EXCITED WE HAVE A GUEST POST!!!


Our Daughter, Christy and her Daughter, Erin made their traditional Peanut Butter Balls today. It isn't Christmas to Erin unless she has Peanut Butter Balls. Some Peanut Butter Ball recipes don't include Rice Krispies. Christy and Erin can’t imagine them without Rice Krispies. As they started their preparations, they decided that it would make a good posting for the blog. I agree!!!!

CHRISTY AND ERIN'S PEANUT BUTTER BALLS
Family traditions add so much to a holiday.

2 cups creamy peanut butter
1 stick butter
1 lb. powdered sugar which might also be 3 ¾ cups
3 cups Rice Krispies
24 oz. of semisweet chocolate chips


Mix first three ingredients.  Add Rice Krispies. Form ¾” balls.  Chill for a couple of hours. Use a double boiler to melt chocolate.  Melt about half of the chips at a time. Dip peanut butter balls into chocolate and place on wax paper. Let set.


Double boiler tip: Boil water with lid on, turn off heat, take lid off.  Put chips in top of the double boiler and leave for 20 minutes.  Stir on low heat.


 
Ingredients:  Peanut butter, butter, powdered sugar and rice krispies cereal.  Plus chocolate chips for dipping.

Erin uses a set of tongs to dip the balls into the chocolate.  Put onto waxed paper and let set after dipping.
