A COMPANY SALAD EASY ENOUGH FOR EVERY DAY

I sometimes feel like a cat because I have had so many life-times in this one life.  All of them have different locations and a different cast of characters.  In one life-time I did a tremendous amount of entertaining.  I find the time just before serving the meal is the most stressful so I do not plan anything that requires last minute cooking.  This salad is so simple, so delicious and so easy, it is fantastic for company but you could make it every day.  Homemade dressing does not contain all the additives and fillers that commercial dressing does.


SALAD PARMESAN
I love to have this salad when I'm entertaining and want to have a tossed salad on the menu. The delicious dressing waits under the greens in a bowl in the refrigerator. No last minute preparations, just remove from the refrigerator, quickly toss and enjoy.

1 clove garlic
1/2 t salt (I use less)
1/4 t pepper
Dash dry mustard
1 T lemon juice
1/4 c olive oil
2 T Parmesan cheese, grated
Mixed greens: Romaine lettuce, Iceberg lettuce, spinach, etc.
Feta cheese, optional
Croutons, optional

Mash together with a fork, the garlic, salt, pepper and dry mustard. Add the lemon juice, olive oil and Parmesan cheese. Put the garlic/cheese mixture in the bottom of a large serving bowl. Heap on top of the dressing the mixed greens. DO NOT MIX dressing and greens together. Cover and refrigerate until serving time. Toss together just before serving. Mix in Feta cheese and croutons, if desired. Add more Parmesan cheese, if desired.
