Nelda makes a biscuit form of shortcake rather than a cake form. The addition of a little lemon or orange zest sets this recipe apart from the usual. Nelda prefers the orange zest for hers. If you have a favorite biscuit recipe, you can add the sugar and zest to it which will result in adding a charmingly delightful new flavor to an old favorite. Shhhhh don’t tell, Tom said no more shortcakes so there are no pictures of this recipe as he is off tooting his horn, but I had to add this biscuit shortcake to the collection of recipes.
2 c flour
3 t baking powder
¾ t salt
3 to 5 T sugar
3 to 5 t grated lemon or orange zest
½ c shortening
1 egg, slightly beaten
1/3 c milk
Combine the dry ingredients and zest in a bowl. Cut in the shortening with a pastry blender. Add milk and egg; mix lightly. Pat or roll into a 9-inch square. Place in 9-inch pan and bake in preheated oven at 450° for 15 to 20 minutes.
