JACI’S SALMON PARTY SPREAD--SO EASY & SO GOOD!

Jaci is a petite, lovely, well-dressed lady who is tireless in doing volunteer work for our church. Her husband and son are outdoor enthusiast so she uses their salmon that they smoke from Alaska or the Great Lakes instead of canned salmon. I have made this spread with smoked Coho salmon from the Great Lakes and with smoked Alaskan salmon. It was sublime. I do not like too much liquid smoke in anything so I would use very little if using canned salmon. I would prefer red salmon rather than pink.

So easy & so good!!!  Enjoy!!!

JACI’S SALMON PARTY SPREAD
1 pkg. (8oz) cream cheese, softened
1 can (7 1/2oz) pink salmon, flaked or 6 oz. smoked salmon, flaked
2 t green pepper, finely chopped
2 t red bell pepper, finely chopped
2 t grated onion
1 t lemon juice
1 t horseradish
½ t liquid smoke, use only with canned salmon, I use sparingly

Ingredients:  Smoked salmon, cream cheese, lemon, red and green bell pepper, onion and horseradish.

Blend or whip all ingredients. Chill 2 hours. Serve with crackers.


Remove skin and bones from salmon.

Pull salmon apart with fingers, looking for any bones you may have missed.

Add salmon to cream cheese in a mixing bowl.

Juice lemon and add to salmon mixture.

Add horseradish to salmon mixture.

Grate onion and add to salmon mixture.

I bought a pepper at the Farmer's Market today that had both a red and a green side.

Cut pepper.

Finally chop both red and green bell pepper.  Add to salmon mixture.

Mix all the ingredients together.  Chill at least two hours.

Mound mixture on a serving dish, grab a cracker and enjoy!!
