FREEZING APPLESAUCE



Applesauce freezes beautifully.  Use my Grandma's method of making the sauce using a food mill as it is so quick and easy.  No need to peel or core the apples.  The best applesauce and apple pies are made with a variety of apples.  Using a mixture of apples results in a fuller, deeper flavor.  The applesauce I made in the July posting was done with green Transparent apples.  The applesauce made this time of year with red apples results in a pretty pink sauce when made my Grandma's way.  My Mom always said that the food mill method was better nutritionaly because the "good stuff" in the peel went into the sauce not the garbage.

SNICKERS APPLE SALAD

Is it a salad or is it dessert???   Either as a salad or as a dessert, it is a caramel apple on a plate that you can eat with a fork.  I made this for our Grand Daughter's 14th birthday party.  Don't get me started on how time flies.  Everyone at the party agreed that the salad was a big hit.

I peeled the apples as all the recipes I looked at called for peeled apples.  When I make it again, I will definitely leave the skin on the apples unless I am using an apple like a Winesap which has a tough skin.  I used Honey Crisp apples which have become my favorite apples.  Their skin is tender and the color would have made the salad prettier.  Pretty or not, the salad is scrumptious.

There is a taste of caramel apples in every bite.  Enjoy!!!

JANE FURFEY’S SNICKERS SALAD
When buying apples for this salad make sure that it is an apples with a crisp texture.  You do not want a soft apple as the salad would be mushy.

6 to 8 crisp apples, I used 5 which gave me 6 cups of cut-up apples
1 large (20oz) can crushed pineapple, drained
6 regular sized Snickers candy bars
1 (8zo) container Cool Whip, thawed

Ingredients: Crisp apples, crushed pineapple, Snickers candy bars, and Cool Whip.

Drain pineapple, save the juice for another purpose as it is not needed in this salad. Rinse the apples well. Peelthe apples, I don't think the apples should be peeled. Cut apples into small chunks. Cut Snicker bars into small pieces. In a large bowl, put all ingredients; mix well. Chill until serving time.



Drain the pineapple well.

Rinse the apples.

Chop up the Snicker bars into small pieces.

Snicker bars chopped.

There should be 2-cups of chopped Snicker bars.

Core the apples, peel if desired.

Chop apples into small pieces.

I have 2-cups of Snicker bar pieces and 6-cups of apples which I thought was enough for the salad.

Mix together the apples, pineapple and Snickers.

Add Cool Whip.

Fold in Cool Whip.

Put salad in a pretty bowl and chill.  When ready to serve, decorate with mint, if desired. 

Enjoy a caramel apple on a plate!!!

MONTANA VERSION OF SNICKER SALAD
Make the above salad and add some Marshmallow Creme.

I think it is now definitely a dessert with the addition of the Marshmallow Creme.  Enjoy!!

MONTANA BACON, LETTUCE AND TOMATO SALAD WITH MICHIGAN COTTAGE COOK DRESSING


I'm obsessed with tomatoes right now. They are so gorgeous to look at and taste so incredible this time of year. The joy of fresh tomatoes is intensified by the knowledge that shortly one cold morning will end the season. Tom just walked through the dining room and said, “You sure have a lot of tomatoes. What are doing with all of them?” I replied, “I’m roasting as fast as I can!!”

I found this BLT Salad in an old cookbook I picked up during my time in Montana taking care of our Oldest Grand Daughter after she was born. It looked like a great way to use my fresh tomatoes so I made it for a church picnic. As my friend, Beth, and I ate my tasteless BLT Salad, we agreed, “Definitely needs more Parmesan cheese.”

The original salad called for just mayonnaise and a sprinkling of Parmesan cheese. I decided I wanted a completely different, more flavorful dressing. In the church salad, I had used good shredded Parmesan cheese. However, in my dressing I wanted the flavor of that good, old Midwestern favorite Parmesan that comes in the green container. I used a shot of hot sauce to brighten the flavor and a sprinkle of garlic powder to compliment the tomato flavor.

Pretty to look at and delightful to eat.  Enjoy!!!

MONTANA BACON, LETTUCE AND TOMATO SALAD WITH MICHIGAN COTTAGE COOK DRESSING
The amount of lettuce, bacon and tomato is from the original recipe. It fills a 2-quart Pyrex-brand dish. Being a salad you can, of course, add much more of anything to make it bigger.

4 c lettuce, bite-sized, I used Romaine
1 large tomato, diced
4 slices bacon, cooked and crumbled, I used 5 slices
DRESSING
1/3 c mayonnaise, light or low-fat works fine
¼ c grated Parmesan cheese
2 T sour cream
3 to 7 T buttermilk or milk, depending on how thick you want the dressing
Dash of hot sauce
2 sprinkles of garlic powder
Sprinkle of shallot salt, optional
Garlic croutons

Ingredients:  Lettuce, tomato, bacon, mayonnaise, sour cream, garlic croutons, and Parmesan cheese.

Plus hot sauce, garlic and shallot salt.

Plus milk or buttermilk.

In a deep dish layer half of lettuce, tomato and bacon. Spread half of mayonnaise mixture on top. Repeat with remaining half of ingredients. Cover and chill salad. Just before serving, top with croutons.

Take off the lettuce core.

Rinse lettuce well.

Spin lettuce to dry or wrap in clean kitchen towel.

Cut off the core of tomato.

Dice the tomato.

Bake the bacon, drain and crumble into pieces.

Tear lettuce into bite-sized pieces.  Put half in a bowl.

Add half of the tomato and half of the bacon.

For the dressing:  Measure out mayonnaise and Parmesan cheese.

Put mayonnaise, Parmesan cheese in a bowl, add a dash or two of hot sauce, and sprinkle on garlic powder and shallot salt.  Thin with milk to the desired consistency.

Put half the dressing on the first half of the lettuce, bacon and tomato.

Add the second half of the lettuce, bacon and tomato to the bowl.  Top with the second half of the dressing.  Cover and chill.

Just before serving, top with garlic croutons.

BAKED BACON--QUICK AND EASY

If you are not baking your bacon to cook it, you are really missing out on a marvelous way to fix bacon.  When cooking for more than two it is much easier to bake the bacon, than to cook it in the microwave or in a pan on the stove.

This lovely bacon is from Frank's Meat Market on Washington in Grand Haven, MI

Lay bacon on parchment paper on a rimmed baking sheet. Bake at 325° to 375° for 15 to 25 minutes depending on how you want your bacon either soft or crisp. If baking at the higher temperatures, watch closely after 15 minutes so bacon doesn’t burn.

Lay parchment paper on a rimmed cookie sheet.  This makes it so much easier to clean up after bacon is done.

Lay bacon on the parchment paper.

Bake to desired doneness.

SCHNOODLE--IZZY

Before our youngest son and daughter-in-law brought a Schnoodle into our lives, I thought a schnoodle was a side dish at a German restaurant.




WHEN THE SUN IS OUT I LIKE TO CELEBRATE WITH AT LEAST ONE SUN BATH A DAY.
