JOYCE'S SUPER EASY CANDY CANE PEPPERMINT FUDGE WITH A TOUCH OF SEA SALT DARK CHOCOLATE AND CANDY CANE KISSES



My lovely neighbor, Joyce, gave me this recipe for Candy Cane Fudge that she enjoys making with her grandchildren.  It is so easy it is child-proof and so good you will want to make it every year.

Joyce said the fudge is so sweet you have to cut it into very small pieces.  I thought I would add some dark chocolate to cut the sweetness.  I have fallen into "lust" for Lindt's A Touch of Sea Salt Dark Chocolate so I decided to add that to the fudge.  The recipe calls for crushed candy canes to be put on the top of the fudge, but I had Candy Cane Hershey's Kisses which I thought would be fun to use.


The basic fudge recipe of chips and frosting can be used with all favors of chips and all favors of frosting.  Let your imagination be your guide.

JOYCE'S CANDY CANE FUDGE

1 (15oz) container of Vanilla Creamy Icing
1 (11oz) pkg. white "chocolate" or vanilla chips
1/2 t peppermint extract
Red food coloring
2 T peppermint candy canes, crushed
(Instead of candy canes, I used 4 squares Sea Salt Dark Chocolate and 9 Hershey's Candy Cane Kisses)

Ingredients:  Creamy vanilla frosting, white chips, peppermint extract, red food coloring, Lindt Dark Chocolate, and Candy Cane Kisses.


Put the white chips in a microwave-safe bowl.  Heat on HIGH for 1 minutes.  Stir the chips.  Heat chips for 30 seconds.  Stir again.  Continue until chips are melted.  BE VERY CAREFUL OF WHITE CHIPS AS THEY BURN QUICKLY!  Stir icing into the melted chips.  Add peppermint extract and stir well.   Put into a 9x13-pan lined with non-stick aluminum foil or lightly spray pan with non-stick spray.  Add one drop of red food coloring in each corner of pan.  Take a butter knife and swirl the red color into the fudge to resemble a candy cane.  Add crushed peppermint pieces to the top of the fudge and gently press them into the fudge.  Cover the pan and refrigerate until the fudge is hard.  Cut into small pieces.





Remove foil from kisses and chop.
 
 
 

Chopped kisses.
 
 
 

Chop four squares of dark chocolate.
 
 
 

Ready for the fudge.
 
 
 

Put white chips into a microwave safe bowl. Melt on HIGH for 1 minutes.  Stir chips.  Microwave for 30 seconds and stir the chips.  Microwave an additional 30 seconds if necessary.  Be Careful!  White chips burn quickly.
 
 
 
 
 

Stir frosting into chips,
 
 
 

Add peppermint extract and stir.
 
 
 

I didn't have non-stick aluminum foil to line the pan so I sprayed pan lightly with non-stick spray.  Put chip mixture in 9x13-inch pan.
 
 

Put a drop of red food coloring in each corner of the pan and swirl the color around to make it look like a candy cane.  I didn't do a very good job of swirling.
 
 
 

Sprinkle fudge with crushed peppermint candy or with chopped chocolate like I did.
 
 
 

I then sprinkled with chopped candy cane kisses and press the chocolate and kisses gently into the fudge.  Cover and refrigerate until hard.
 
 

Cut fudge into squares.
