MEXICAN FOOD
I still have a spinning head, an itchy throat and a dizzy stomach. However, it is Tuesday. On Tuesday, it doesn't matter how we feel. It doesn't matter if there is a blizzard, icy roads, fog, or a wind chill in negative numbers. On Tuesdays, we pack our chemo bags and head into Grand Rapids and Lack's Cancer Center. Today was no different than every Tuesday since July. On the way home we stopped at Home Depot to try to find some tablets to melt the ice on the roof as the icicles are almost reaching the ground because old cottage are low on insulation.
We stopped to get some take-out at a Mexican restaurant by the Depot. We got home, tired and ready to crash. As we ate our food, we looked at each other and said, "Greasy!!!!!!!!" So I decided today to re-post three posts from last year on preparing Mexican food that is definitely not greasy, but awesome and delicious.
