SCRAPPING THE SIDES OF THE BOWL WHEN BAKING
In old cookbooks there are usually just a few lines of directions for the recipe. It was assumed that the reader knew how to cook. Recently I was looking at a new recipe book and the directions were a page long. After every step in the mixing process was the phrase, “Scrap the sides of the bowl with a rubber scrapper.” Anytime you bake you must continually move the dough/batter off the sides of the bowl and in some cases off the beaters themselves. I have said this and now I hope you will do it. Seeing page long directions can make recipes intimidating and sure makes the cookbooks heavy and bulky to use.
