Aunt Barb, dramatically and humorously shocked, shielding her view with her purse of what was happening on the dance floor at her Daughter's Wedding.
Aunt Barb was Tom’s maternal aunt. We lost her last January. On Saturday, her children chartered the schooner, Wind Dancer, and at her request we sailed out into Lake Michigan to scatter her ashes. It was a beautiful last trip for a beautiful lady.
Aunt Barbara was a woman before her time. She did not let the restrictions placed on women by society stop her from having a meaningful career. She was bright, beautiful, and witty. She was a powerful woman who also loved to cook and do needlepoint. She could be very candid, but her remarkable sense of humor took away any sting to her words. It is her wonderful sense of humor that I will remember most about her. It was truly an honor to know her even if it was for a relatively short time.
AUNT BARB’S PICKLED RED ONIONS AND VEGETARIAN SANDWICH
Aunt Barb had many signature recipes; however, this one is a favorite family summer recipe when the tomatoes are picked right off the vine flavorful, red, and juicy.

PICKLED RED ONIONS
These zesty onions perk up any kind of sandwich.
Red onions, sliced
Italian salad dressing
Marinate onion slices in Italian dressing overnight.
Ingredients.
Slice onions.
Pickled red onions.
VEGETARIAN SANDWICH
Aunt Barbara was very elegant and always cut the crusts off the bread. I tend to leave them on as I like the crust.
Ingredients for sandwich.
Good wheat bread
Pickled red onions
Tomatoes, sliced
Lettuce
Provolone cheese slices
Grainy mustard
To make sandwiches, top one slice of bread with onion slices. Top the onions slices with lettuce, then cheese. Spread mustard on second piece of bread and place it on cheese.
Spread one bread slice with mustard and layer onions on the other piece of bread.
Top with tomatoes and cheese.
Top with lettuce, I like lots of lettuce.
