THE CHEESE LADY AND BRUN-UUSTO OR JUUSTALEPIA OR BREAD CHEESE

In Muskegon, Mi, a charming and cheerful lady runs the The Cheese Lady shop,  She also sells her cheese on Saturday at the Muskegon Farmer's Market.  She is the most knowledgeable person I have met on the subject of cheese and it is easy to see that she loves her work.

We took Tom's family up to the cheese shop when they were visiting.  They were soooo impressed.  We all bought cheese and had nightly cheese tastings before dinner. 

Since I am timid I like to stand around and listen to other people talk.  It is one of the ways that I learn.  The Cheese Lady and a customer were having a long conversation about Bread Cheese from Wisconsin.  I had never heard about it.  After the customer left, I asked the Cheese Lady about it.  It is a Finnish/Swedish cheese called Juustalepia which translates to Bread Cheese as the cheese is baked to form a crust like the crust on bread.  To serve, you warm it in a frying pan, microwave it or grill it.

I thought it was something very rare and hard to find until I was at Costco the other day and it was in their cheese case.  It would be wonderful for tailgating.  It tastes like Fried Mozzarella cheese without all the additional calories from the breading and the frying.  I like it on crisp lavish.  The customer at the store put it into pita bread with tapenade.  I think its use is limited only by your imagination.  Do look for it and try it.

This looks very dark in the picture but it looked better for real.  I like it on a lighter cracker than the Ritz crackers we had.

  2. If you aren't from Michigan and your supermarket doesn't have it or won't order it for you, I would look on line for a Wisconsin cheese source and email them for a source.
