Everything went great...except I waited until it was late at night to make it and forgot to add the ice water...tastes just like I remember, just a bit more crumbly! :) JCI Momhttps://www.blogger.com/profile/12739365542098054517noreply@blogger.comtag:blogger.com,1999:blog-7697344474723869688.post-14329397379678164592015-12-18T10:57:56.533-05:002015-12-18T10:57:56.533-05:00I'm always looking for quthentic recipes from ...I'm always looking for quthentic recipes from my childhood memories... I Just made your recipe for the first time last night and my husband immediately knew I had used a different recipe. I asked if that was bad and he said "no! That's the one! It's way better than last year... Not overly sweet" so I'm keeping your recipe and it will be my new go-to recipe. I also made my own paste using the recipe from one of the Comments. Perfect. You can share this recipe with them. I have made it and it works well.

1/2 pound blanched almonds (1 1/2 cups)
2/3 Cup sugar
2 Tablespoons water
1 Tablespoon fresh lemon juice
Dash salt

Whirl the almonds, 1/4 cup at a time, in a blender until smooth and paste-like; stop the blender as needed to push any unground nuts into the blender blades. Repeat for the rest of the almonds. If using a food grinder or chopper, run the almonds through 4 times. Put the ground almonds in a mixing bowl. Combine the remaining ingredients in a small, heavy saucepan; heat slowly, stirring constantly, until the syrup comes to a full boil in the center of the pan. Remove from heat; pour over almonds and mix well with a wooden spoon. Cool 5 minmutes then knead with your hands until the paste holds together and can be formed into a roll. Wrap the roll tightly in plastic wrap and aluminum foil, twisting the ends to seal. Let ripen in refrigerator 1 week.

Making in a food Processor: Place all the aslmonds in a food processor container and whirl about 60 seconds; with the motor still running, gradually drizzle in the hot syrup through the spout; continue whirling until the mixture forms a ball. Do not knead; form into a roll; wrap and store as above.Joan Garneaunoreply@blogger.com
